<p><strong>Crispy Turkey Tostadas Recipe</strong></p>
<p>Ingredients</p>
<ul>
<li>1 14-ounce can petite diced tomatoes, with jalapeños optional</li>
<li>1 medium onion, thinly sliced</li>
<li>3 cups shredded cooked turkey, or chicken (12 ounces; see Tip)</li>
<li>8 corn tortillas</li>
<li>Canola or olive oil cooking spray</li>
<li>1 avocado, pitted</li>
<li>1/4 cup prepared salsa</li>
<li>2 tablespoons reduced-fat sour cream</li>
<li>2 tablespoons chopped fresh cilantro</li>
<li>1 cup shredded romaine lettuce</li>
<li>1/2 cup shredded Monterey Jack cheese</li>
</ul>
<p>Preparation</p>
<p>1. Position racks in the upper and lower thirds of the oven; preheat to 375°F.<br />
2. Bring tomatoes and their juice to a boil in a medium saucepan over medium heat. Add onion and cook, stirring occasionally, until the onion is soft and most of the liquid has evaporated, 15 to 20 minutes. Add turkey (or chicken) and cook until heated through, 1 to 2 minutes.<br />
3. Meanwhile, coat tortillas on both sides with cooking spray. Divide the tortillas between 2 large baking sheets. Bake, turning once, until crisped and lightly brown, about 10 minutes.<br />
4. Mash avocado in a bowl. Stir in salsa, sour cream and cilantro until combined.<br />
5. To assemble tostadas, spread each crisped tortilla with some of the avocado mixture. Top with the turkey (or chicken) mixture, lettuce and cheese.</p>

<p>Gluten allergies, wheat allergies, and celiac disease have become a major concern for many adults, children and babies in the United States. One out of six people are sensitive to gluten. One out of six are sensitive to wheat. One out of 100 people has celiac disease and they do not even know it. The rates are on the rise.</p>
<p>Undiagnosed gluten and wheat allergies or celiac disease can cause many health symptoms which possibly could include leaky gut syndrome where undigested food particles leak and enter your blood stream. This leaves your intestinal tract open to bacteria and toxins which can potentially trigger autoimmune responses in your body. Symptoms would include increase in food allergies, skin disorders, inflammation, bloating and gas to mention a few.</p>
<p>What exactly is gluten? It is the protein part of wheat, rye, barley, and other related grains. It gives grains an elastic feel and makes bread what it is.</p>
<p>Being diagnosed with a condition like gluten sensitivity may seem overwhelming at first. As you learn more about the condition and how to treat it you will realize that there are many options for you to try in your diet. The key is to remain symptom-free and eating healthy. Here at Seasons, we do test for gluten and food sensitivities. This recipe is tailored for gluten-free diets, and it is healthy and tasty enough for everyone to enjoy!</p>

<p><strong>Black Bean and Corn Salad </strong>(4-6 servings)</p>
<p><strong><em>Ingredients :</em></strong></p>
<ul>
<li>1/2-2/3 cup fresh lime juice (can use lemon)</li>
<li>1/4-1/3 cup olive oil (can add 1-3 tablespoon or water)</li>
<li>1-2 cloves garlic (1 tsp. garlic powder)</li>
<li>1/2 teaspoon salt</li>
<li>1/8-1/4 teaspoon black or cayenne pepper</li>
<li>2 (15 ounce) cans black beans, rinsed and drained</li>
<li>1 1/2-2 cups frozen corn kernels</li>
<li>1 avocado, peeled, pitted and diced</li>
<li>1 small cucumber, peeled and diced</li>
<li>1 red or green pepper, chopped</li>
<li>2 tomatoes, chopped</li>
<li>1 large sweet onion (can use green onions 4-6 instead)</li>
<li>Can add chopped parsley or cilantro as option (1/2 cup)</li>
</ul>
<p><em><strong>Directions:</strong></em></p>
<ol>
<li>Place lime/lemon juice, olive oil, garlic, salt, pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.</li>
<li>In a large bowl, combine beans, corn, avocado, bell pepper, cucumber, tomatoes, onion, and cilantro/parsley. Shake dressing, and pour it over the salad. Stir salad gently to coat vegetables and beans with dressing, and Serve. Easy to make and tasty!</li>

<p><strong><em>Gold Standard for Healthy Eating: the Mediterranean Diet</em></strong></p>
<p>A heart healthy eating plan that focuses on fruits, vegetables, whole grains and healthy oils is important to our body’s function and health. As with all heart healthy diets, fruits, vegetables and grains are key. With the Mediterranean diet, more emphasis is placed on whole grains rather than refined as well as fresh fruits and vegetables rather than juice or fruit drinks. Extra virgin olive oil is the principle source of fat in the Mediterranean diet, being used for cooking, baking and for salad dressings and drizzling on vegetables. Nuts, legumes and fish are encouraged to provide the main source of protein. While water is essential for life and should be the drink of choice, 1-2 glasses of wine is recommended every day.</p>
<p>If this sounds like the diet for you, start by increasing your intake of vegetables, fruits and whole grains. Aim for half of your plate to be covered with non-starchy vegetables and drizzle with extra virgin olive oil after you have cooked them. Don’t forget that seasonings are the spice of life in the Mediterranean diet.</p>

<p><strong>Roasted Vegetable Cheddar Quiche</strong></p>
<p><strong><em>Ingredients :</em></strong></p>
<ul>
<li>2 cups roasted vegetables(medley of broccoli, zucchini, carrots, garlic, sweet potato, peppers)</li>
<li>4 oz. aged Cheddar cheese, grated</li>
<li>4 organic free-range eggs, beaten</li>
<li>1/2 cup light cream, Half and Half Cream (or non-dairy sub)</li>
<li>A pinch of nutmeg</li>
<li>A pinch of Old Bay Seasoning</li>
<li>10 sweet grape or cherry tomatoes, halved</li>
<li>Chopped basil or parsley</li>
</ul>
<p><em><strong>Directions:</strong></em></p>
<ul>
<li>Pre-heat the oven to 375 degrees F. Lightly oil a 9-inch glass pie plate with extra virgin olive oil.</li>
<li>Layer the roasted vegetables in the bottom of the pie plate (I layer the potatoes first.) Scatter most of the shredded cheese over the vegetables.</li>
<li>In a large measuring cup or mixing bowl, use a fork to beat the eggs with the cream, and add a pinch of nutmeg. Pour the egg mixture all over the veggies and cheese, allowing it to seep in. (I lightly press down a bit with a thin silicone spatula to make sure the custard mixture sneaks in to all the nooks and crannies.)</li>
<li>Press the halved tomatoes all over the top; sprinkle a tad more of the remaining cheese; dust lightly with basil or parsley.</li>
<li>Bake the pie in the center of a pre-heated oven for 30 minutes, or until the center of the pie is set, and the edges are turning golden brown.</li>
<li>Set on a wire rack to cool for five minutes before serving. This allows the pie to settle, and makes it easier to slice and serve.</li>
<li>Serves 4-6 – light and tasty with a side of crisp greens or fruit salad drizzled in a raspberry vinaigrette.</li>

<p>So it’s been about two months since I received my food sensitivity testing results. Things have been going pretty good. I was really excited after the first two weeks and 5 lb. weight loss. And then I began to get a little bored. I was going to have to really start “working” the list – by that I mean really avoiding my yellow foods (yellow list = mild sensitivity) and stick to my green (green list = no sensitivity). I had done really well avoiding my reds (red list = severe sensitivity) and oranges (orange list = moderate sensitivity). That was the easy part because there weren’t very many! The yellow list (yellow list = mild sensitivity) on the other hand was quite a bit longer!</p>
<p>Grocery shopping has become a little more intense. I am buying more fruits and veggies – but not just any fruits and veggies. Only certain fruits and veggies that appear on my green list! Oh, and did I mention my husband has gotten his food sensitivity test results? That makes grocery shopping even more challenging! Bored? Did I say I was bored? Ha! Not anymore. Now I have a mission!</p>
<p>Being a working mom with two small boys, I have to be prepared: meal planning, activity planning (not really a strong suit of mine), etc. We have always been a family on-the-go trying to eat healthy. But somehow, fast food has snuck into our lives. Let’s face it, it’s just easier.</p>
<p>But no more fast food for this family! With my and my husband’s food sensitivity results, I am armed and ready to tackle the healthy lifestyle…again! We have always enjoyed exercise, being outdoors and considered ourselves healthy. But with work and busy schedules, the diets have fallen by the wayside. My food sensitivity results have given me the perfect opportunity to get my family in check!</p>
<p>I know it won’t be easy to get everyone on board, but the benefits will be worth it! I am so fortunate that my husband is doing this with me and that we will be educating our children along the way. They already are aware of the “green” list and what Mom and Dad can and can’t have. It’s really cute!</p>

<p>I did a lot of debating with myself about having food sensitivity testing.</p>
<p>At first I didn&#8217;t want to do it. I forbid myself to think that I wanted to do it. Why? I didn&#8217;t want to know what it was going to tell me. I was afraid of it. I was afraid that it would tell me that I couldn&#8217;t eat the things that I love to eat.</p>
<p>But I know of the success stories. Our patients who have eliminated foods from their diets they were sensitive to feel better and lose weight. And I wanted to feel better. Don&#8217;t get me wrong. I feel pretty good. But as the working mom of two young boys, I need every ounce of energy I can possibly generate from my body! Weight loss wasn&#8217;t necessarily my goal, but it could be an added bonus.</p>
<p>So here&#8217;s a look at me before food sensitivity testing. My symptoms were:</p>
<ul>
<li>Headaches</li>
<li>Tired often</li>
<li>Lack of energy</li>
<li>Cravings (carbs, chips, salty)</li>
<li>GI Symptoms (stomach issues)</li>
<li>Trouble losing weight</li>
<li>Didn&#8217;t feel 100%</li>
</ul>
<p>The great irony of this whole story is this&#8211;I was telling my patients to do it (and I try to do everything that I tell my patients to do) but I hadn&#8217;t had the courage to face it myself. That fear of the unknown can be so overpowering, can&#8217;t it? I w anted to be able to tell them first hand what it was like, and why the sacrifices would really be worth taking the test.</p>
<p>And then, 3 weeks after sending my blood to the laboratory, the results arrived. As expected, there were sacrifices that would have to be made.My results revealed that I had a tremendous food sensitivity to &#8212; are you ready for this? &#8212; coffee. Argh. I crave coffee every day. I was not excited about this. But, I stopped cold turkey. And not only did I stop coffee, I&#8217;ve stopped diet cokes, too.</p>
<p>The results? 2 weeks in and I have lost 5 pounds AND I feel a lot better. Significantly better. I&#8217;ve gotten back into running and exercising.   Even my husband said that he could tell a difference. Just from seeing what it has done for me, he is sold&#8230;.he came to Seasons yesterday to have his blood drawn to check his food sensitivity.</p>
<p>And that, my friends, is the story. Two weeks and results. It hasn&#8217;t been easy. Ridding your body of the causes of inflammation is one of the keys to the health and wellness kingdom.</p>
